Spicy! Butternut Coconut Curry Soup

Ghost Pepper Curry Powder is the kicker to my butternut squash soup that is vegan. Also, I add kale, spinach, mushrooms and carrots to add texture and flavor (and trick husband unit into eating all of them).

How I get my husband to eat vegetables he needs but doesn’t dig…make a soup!

Can we not do an entire PHOTO SHOOT of the items we want to share recipes for? OK great.

Equipment I use

InstantPot
Blender


Ingredients

Spice Time: CRITICAL

⅛ t ghost pepper curry powder
1/2t black pepper
1/2t ginger
1t salt
1 veggie bullion cube
1 pinch of cayenne pepper

5C water
1C Thai coconut cream milk
Drizzle EVOO

1 yellow onion chopped
3 garlic bulbs chopped

2 large butternut squash cubed
2 russet potatoes cubed (skin on)
2 carrots chopped (skin on)
2C spinach
3C lacinato kale chopped
3 white mushrooms chopped

Let’s do it!

Prepare ALL of your ingredients before you begin cooking. Chop, measure, prep is key. Blend your spices in a bowl and use a fork to make sure they’re nicely mixed.

In your Instant Pot:

Saute onion, garlic in the drizzle of EVOO just to soften. Not really necessary though!

Turn off Sauté mode.

Blend your chopped veggies in a large bowl (it’s easier than trying to do it in the IP).

Add veggies to IP.

Add 5C of water.

Chop bullion into tiny blocks and sprinkle into IP.

Place spices in coconut cream milk. Stir them in. (Take a teeny-tiny taste…it’s so yummy!). Add them to IP.

Push veggies into liquid as best as you can.

Place IP lid on, adjust steam release to CLOSED.

Manual time of 40 minutes (try 30…it’ll likely work. I live at 7,000’ so things take a little longer and require more fluid).

When IP done you will scoop all of the cooked ingredients into your blender small batches at a time then transfer into a big bowl. Once all of the ingredients have been liquified pour them back into the IP and turn off completely.

I’ll post a photo of it all served up if I can. I’ve made this soup 10 times at least and it NEVER gets old. This recipe is a bit different because I was forced to get GHOST PEPPER CURRY…no, wait…I read it wrong and meant to get just plain old CURRY POWDER. That ghost pepper portion is what gives this a little MORE HEAT which my husband LOVES.

Serving with sourdough bread and vegan butter.

Making croutons to float on top (yum)!

It’s gonna snow here in Colorado today or tomorrow so I’m READY with this warm meal to enjoy.

Simple Potato Vegetable Vegan Soup

We want to eat WAY MORE vegetables so I made this soup. Leftovers will be crazy deeeelish too.

Ingredients piling up in my bowl. NOT ONION OR GARLIC though.

POTATO and VEGETABLE SOUP
SUPER SIMPLE
Vegan

Instant Pot, High for 20 Minutes

Ingredients

5c of water
1 medium onion, chopped
3 garlic cloves, minced
2 corn on the cob kernels
½ Poblano pepper

3c diced potato (I got purple fingerling spuds at my grocery – they look like sausages I think)

1/2c chopped parsley
1/2c chopped cilantro
3/4c frozen green peas
1c shredded mushroom
1/2c shredded green zucchini
1/2c shredded yellow summer squash
1c kale, sliced into small strips
1/2c shredded carrots
1c uncooked brown rice WELL RINSED!

Spices
1 vegan bullion cube (I used Chick’n flavor)
1T drizzle EVOO
2t cumin
1t oregano
1/2t rosemary
1/2t thyme
1t black pepper (coarse)
1/2t pink himalayan sea salt
1/8t cayenne pepper

Start:

Chop Onion and Garlic place in separate bowl (glass or metal, it will change the flavor of plastic)

CHOP EVERYTHING ELSE UP and place in separate bowl.

Blend your spices together using a fork, set aside.

Turn Instant Pot on SAUTE.

Add onions for 1 minute then garlic for 1 minute stirring constantly to soften them.

Add half the veggies, stir well.

Add 4 cups of water.

Add spices, stir well again.

Add remainder of veggies.

Stir (duh, right?). Try to get everything immersed in the water.

Add rice.

Add last cup of water and press rice into the mixture well.

Place IP lid on, turn to steam release off.

Press MANUAL.

Set for HIGH.

Set for 20 Minutes.

Just enough time to get your kitchen put back together!

When done cooking I normally let my IP sit for a little longer and allow the steam to release on its own. If you choose to hurry the process when it is done cooking and timer has gone off just be safe with your release valve. Wear oven mitt and to avoid spraying steam everywhere drape a lightweight (like a bread covering towel) kitchen towel over the top (only one layer).

PS: Your house will smell SO GOOD from start to finish. Nothing as good as chopped fresh produce then all of these spices.

Stayton Acres Bean and Lentil Chili

I’m inspired to make a chili that will need a Stayton Acre avocado on top to offset the heat. Today is Day 22 for me living in my travel trailer. I’m excited that I’m doing this with little stress really. We are eating healthy meals and having a salad everyday. 
This recipe was created with plenty of hearty protein and vegetables in mind.  
Serve with sourdough, crunched up tortillas on top or corn bread.  
Don’t forget to chop sliced avocado on top.
1 yellow onion, chopped

Ingredients

5 garlic cloves, chopped

1T EVOO
1 16oz can black beans

1 16oz can garbanzo beans 

1 16oz can red kidney beans
1 cup orange lentils

1 yellow bell pepper chopped

1 red bell pepper chopped

1 corn on the cob fresh kernels removed

3 celery stalks, chopped

1 14.5oz can of fire roasted diced tomatoes

Spices (IT’S ALL IN THE SPICES!!)

1T cumin powder

1 ½ t chili powder (hot)

2T smoked paprika

1/2t coriander

1t black pepper

3/4t salt

1/2t cayenne pepper powder
Avocado (depending on how many people love avocado…I like ¼ large avocado per person chopped on top).

 

Bread Pudding in 15 Minutes

Whoa.  Whoa, whoa, whoa.  I never really ever liked bread pudding and now I LOVE it!  Today I was a busy bee in the kitchen.

Bread pudding with fresh cranberries.  JUST FEED ME!

Ingredients

A bowl that can be put into the pressure cooker (size and durability)

3 slices of bread (about 4 cups) broken into bite sizes

2T chia seeds

3T water

½ t cinnamon

½ c coconut/almond creamer (or almondmilk)

2T brown sugar

1 c fresh raw cranberries (rinsed)

Directions

SET YOUR INGREDIENTS UP ON COUNTER BEFORE STARTING!

Place bread in bowl, set aside.

Blend the remaining ingredients.  Add cranberries last stirring in but not smashing them at all.

Pour over bread and fold together wetting the bread.

Place steaming rack into Instant Pot.

Pour 1 cup of water into bottom of Instant Pot.

Place bowl with bread and mixture into pot.

Close lid and secure steam trap to CLOSED.

Set on HIGH for 15 minutes.

I let the steam leave on its own, you can release the steam once the pot beeps completion.

Serve up immediately!

Any type of fresh fruit would work for this I’m betting.  I’ll also be trying this with different types of bread.

Releasing Pressure Safely From Instant Pot

I’m taking this opportunity to practice my Adobe Premier CC skills (learned using YouTube for the record).

Since I began sharing my recipes and spreading the LOVE about my Instant Pot I’ve seen concerns about the pressure release.

Back in the 70’s cooking in a pressure cooker was not always safe. Pots could and would explode! The tsss-tsss-tsss sound the heavy disk made as it danced letting pressure out bit by bit was fun to watch and my mom kept it on the furthest back burner.

That sound always meant we would be eating ON THE RITZ that night.

Today, different story. I can only speak for the Instant Pot and I have a video to show you that IT IS SAFE TO RELEASE THE PRESSURE.

Hearty Italian Vegetable Stew

InstantPot Pressure Cooker
Vegan, Vegetarian, Low Fat, Protein Packed

Hearty and delicious.  Pair with a warm cornbread or salty tortilla chips!

Ingredients

Stage 1
1T water
6 garlic bulbs chopped
1 onion peeled and chopped
5 celery stalks chopped (tops included)
parsley-thyme-oregano-basil-red-pepper-spices
Stage 2
64oz of vegetable broth
1T parsley
1t thyme
1t oregano
1t sweet did basil
1t crushed red pepper (double if you want this super spicy)
lacinato-kale-chopped
Stage 3
3 carrots chopped
3 yellow potatoes with skins on, diced to bite size

1 small can/cup Great Northern beans
4 giant Lacinato kale leaves, sliced to small strips
3 cups of broccoli florets (bite size)
1 cup of frozen sweet corn
stew-before-pressure-cooking

Directions

IMPORTANT: Prepare ALL of your ingredients before you begin.

Press ON Saute Mode, add Stage 1 ingredients.
Toss around to get water spread evenly.

Turn Saute Mode OFF.

Add Stage 2 ingredients.  Stir to combine everything.

Add Stage 3 ingredients continuing to stir.

Turn ON Manual Mode, set to HIGH PRESSURE and 10 minutes.

Be sure the release valve is CLOSED.

InstantPot turns on by itself with beeps.  The pressure will build up.  Once it does the “10 minutes” begins.  It will beep when the 10 minutes is up (just enough time to clean up my kitchen, floors swept and mopped or dishwasher unloaded).

You could even use this time to bake HOME MADE CORN BREAD!  See that recipe here.

You can manually release the pressure (USE AN OVEN MIT – IT IS EXTREMELY HOT).  I normally lay a hot pad or towel loosely over the release valve so the steam doesn’t hit the ceiling (which it will).  Let the steam go until the valve pin next to it drops.  You cannot open the lid until that pin drops.

Open and stir.

Serve.
